Deliciously Ella's Culinary Magic: A Dive into Healthy Family Dinners

The beans guarantee that it truly fills you up, and the aubergine adds a wonderful texture. Serve it with crispy roast cauliflower, jacket potatoes, or jasmine rice for a more substantial meal. It tastes excellent on its own for a light dinner.

 

Almond butter, harissa, and creamy black bean stew

Components:

One tablespoon of olive oil

Two shallots, cut in half and thinly sliced

One aubergine, chopped coarsely and formed into cubes of 1 centimetre.

four smashed garlic cloves

One 400g can of washed and drained black beans

3 tablespoons harissa, plus enough to serve

One 400ml coconut milk can

400 ml of heated vegetable stock

Two tablespoons of rich almond butter

Two teaspoons of maple syrup

grated lime juice and zest from two fresh limes

Black pepper and sea salt

Technique:

1. Heat a large frying pan with olive oil over medium heat. Add the eggplant and shallot, along with a dash of salt. Fry for five minutes, or until the aubergine is tender. Fry the garlic for two minutes, or until fragrant, then add the black beans and harissa.

2. Add the maple syrup, almond butter, stock, and coconut milk. After bringing to a boil, cover the pan and reduce the heat to a simmer. Simmer until the sauce has thickened, about 15 minutes.

3. Add the zest and juice of the lime, and to taste, season with salt and pepper. When ready to serve, stir in an additional tablespoon of harissa (if you'd like a bit extra heat).

Simply slice your cauliflower into small florets, spread a tablespoon or so of olive oil and salt on a baking pan, and bake in an oven warmed to 200ºC fan for 20 to 25 minutes, or until golden and crispy, to produce crispy roast cauliflower.
